(I added some butter to this one as a fat. It felt really decadent!)

A flour free and sugar free lifestyle has been a blessing to me in so many amazing ways!

Just a few months after cutting out flour and sugar from my diet, my oldest child was diagnosed with an allergy to wheat and barley. This is something that would have made me panic a year ago. But since I saw how easy it was to live without flour and how much better I felt, I just knew everything was going to be okay!

Since I don’t eat flour or sugar, these rolls fit the bill for both me and my son. He hasn’t tasted them yet but I KNOW he is really going to like them!

(Note: These are 100 times better than the “Cloud Rolls” I’ve tried.)

The recipe is simple. I’ll be trying different versions in the next few weeks.

Flour Free Protein Rolls

  • 10 oz old fashioned oats
  • 14 oz cottage cheese
  • 3 eggs
  • ½ tsp salt

Preheat your oven to 400 degrees. Line a cookie sheet with parchment or a silicone mat.

Mix all ingredients together. Using a 1/3 c. measuring cup, make 10 even rounded patties.

Bake for 20 – 25 minutes until they start to look dry, are set, and very lightly browned.

These are fantastic warm!

For BLE – 1 roll = 1 grain and ½ protein (just add another half protein and a fruit and you’re good to go!)

*NOTE: These freeze really well. Someone gave me a tip to slice them and then freeze them so you can opt to make a sandwich with them later. I froze each one in its own little sandwich baggy and have been warming them in the microwave for 30 seconds.

This helps me keep me from eating ALL of them as soon as they are baked.

Mix the oats, cottage cheese, eggs, and salt together.

Everything will be just a little moistened .

These are what my mounds looked like right before baking. They’re a pretty decent size!
